Vegetarian Dish-Fusilli Pasta

At Roma Grill Chef Roberto makes fusilli pasta in their pasta factory that is located just inside the front door of the restaurant.

Roberto starts with searing the vegetables. He uses bell peppers, asparagus tips, fresh tomatoes, yellow squash, and mushrooms. Half way through searing he adds garlic, salt, and pepper. Near the end of cooking Chef Roberto adds a spash of white wine and tomato sauce and he puts the fusilli in the pan with the sauce. The corkscrew shaped pasta allows the pasta to absorb the sauce and give it a better flavor. The pasta is made fresh so it only takes a few minutes to cook, unlike a dried pasta.

Add a drizzle of extra virgin olive oil and it’s time to eat a colorful, vegetarian pasta dish.
