<p>Eating food cooked with Liquid Nitrogen is a new concept to many foodies.  Very few restaurants in Las Vegas even offer this style of dish but you can find more than one at Nu Sanctuary Lounge. </p>

			<content:encoded><![CDATA[<p></p><p><em>Immersion Cirulator</em>- used for cooking food in warm water.  The temperature is kept uniformly constant.  Food cooked in a circulator is wrapped in an air-tight bag and dropped into the water. </p>
<p><em>Sous vide</em>- a French term meaning &#8220;under vacuum&#8221;.  This is a method of cooking in a vacuum sealed bag for an extended time at low temperatures. </p>
<p>So what is the purpose of this style of cooking?</p>
<p>Lock in flavor and moisture.  Some even say the dish even retains more of it&#8217;s nutritional values that are normally escape when prepared in a pan or oven.</p>
<p>Chef Brian Howard begins with locally farmed organic chicken and he slices it to form a pocket for stuffing.  Then he stuffs the chicken with spinach and taleggio cheese.  The next step is tightly wrapping it in prosciutto and putting it into a vacuum sealed plastic pouch then dropping it in the Immersion Circulator. </p>
<p>Chef Howard lightly cooks the outside of the chicken only to give the prosciutto a light crispy texture.  The dish is then plated over a sauvignon blanc butter sauce and a fresh green salad with kalamata olives, heirloom tomatoes, and cucumber.</p>

<p>Chef Howard offers inventive creations in an innovative atmosphere. They say it is a  modern global fusion of fare with a menu that is progressive, but approachable.  The Nu Sanctuary Lounge Chef developed his craft through working with such celebrated chefs as Thomas Keller, Andre Rochats and Kerry Simon. </p>

<p>Nearly 80% of the atmosphere consists of this non-toxic, non-flammable gas with a boiling temperature of -196 Celcius, which means it boils at room temerature and evaporates immediately.</p>
<p>Chefs enjoy using this not only for it&#8217;s cooking properties but for affect.  When a dish enters the dining room and is smoking like a rock concert stage, it get&#8217;s attention. </p>

<p>At the Mario Andretti Racing Experience you can drive on the same track the pros drive.  Navigate turns at 150mph in a car that sits 1 inch off the ground.  Your personal race instructor coaches you using in car radio communications while you drive without a pace car.</p>
<p>After your training and instruction you are suited up in a racing suit and escorted out to the track and fitted with a helmet and radio.  Hop into a car and put the pedal to the floor (almost).  All you have to do is hit the gas and drive.  Their are no stick shifts and clutches to worry about (other than to start it).  You don&#8217;t need to touch the brake until you finish driving.  The banks in the turns are 21 degrees and meant for high speed turning.  Focus on staying in the white dots and listening to your coach and you will have the ride of your life. </p>
<p>The first time around the track some drivers tend to slow down on the turns but that is not necessary with the banking and the way the cars are designed.</p>
<p>Are these two stories folk tales&#8230;I don&#8217;t know but they do demonstrate to valid points:</p>
<p>&#8220;If this track offered a van tour you might need to keep the speed up so you don&#8217;t tip over on the banks.  At 21 degrees you should and can all-out-fly on the turns.&#8221;</p>

<p>&#8220;The front and rear wings work together to create an aerodynamic downforce that pushes the car to the track.  At high speeds the car is pushed down to the road so hard that if the road went upside down the car could stay on the road, seemingly defying gravity.&#8221;&#8212;-&gt;Don&#8217;t try it.</p>

			<content:encoded><![CDATA[<p></p><p>Have you ever had that dream of flying?  No not the kind that you are wrapped in steel and windows&#8230;sitting in a seat made for a child with a Flight Attendant wanting to rent you headphones to watch a bad movie.</p>
<p>I am talking about flying with a slight breeze in your face with an aerial view like a bird or superman.</p>
<p><strong>Now you can.</strong></p>
<p>Strap on the para-gliding harness and ride a zip line&#8230;and not just some ordinary zipline.  These lines are much thicker than traditional lines (probably to withstand the weight with such long runs). </p>
<p>BC Flightlines takes you to the top of Red Mountain at about 3800 feet.  You begin your descent on a series of 4 separate lines ranging from 1150 to 2550 feet.  You can reach speeds of up to 60 mph while enjoying spectacular views.  You can see a panaramic view of Las Vegas, Boulder City, Henderson, and Lake Mead. </p>
<p>The crew will teach you how to &#8220;Starfish and Torpedo&#8221;.  Who knew there were &#8220;styles, moves, and postures&#8221; in ziplining.  It is important to know because of the speed of each line.  One of the lines it is crucial to Starfish (spread your arms and legs wide) to encounter as much wind resistance as possible.  This is due to the positive line (pick up speed the entire way down).  You don&#8217;t want to go too fast because you do have to stop at some point.  Then there is another line that has a bow just before the finish line and you have to Torpedo the whole way to keep your speed up.  Otherwise one of the crew members has to crawl out to your suspended location and tow you in. </p>
<h3>History and Trivia</h3>
<p>It was obviously going to be a thrill and offer great views but I was surprised how entertaining the crew was.  This group of young guys even told us stories how Bootleg Canyon got it&#8217;s name during the construction of Hoover Dam.  The construction workers avoided heading back to Vegas where they could booze the night away and gamble their paychecks away.  Instead they brewed their own booze in&#8230;Bootleg Canyon.  In the van ride up the mountain the crew points out a rocky spot that appears to be a place for a pot still or something similar.</p>
<h3>Special Events</h3>
<p>Bachelor parties, bachelorette parties (yes they have hosted some), birthday parties, and other large groups can enjoy a couple hours on the mountain. </p>
<p>With only a limited number of Ropes courses available in Las Vegas but a number of conventions, this is a good spot for Leadership and Team Building events.  You can bet that individuals can spend some time overcoming fears at BC Flightlines. </p>

<p>This dish is a 12 ounce portion about the size of a large pizza with 5 ounces of blueberries, 6 oz of toasted pecans.  The Chef has to flip the pancake with a traditional spatula and a drywall blade because of the size.  It also comes with a quarter pound of sausage and 6 ounces of eggs. </p>

			<content:encoded><![CDATA[<p></p><p>Foodies and historians are unable to agree on the origins of Fried Chicken and Waffles but most versions are at least one hundred years old. </p>
<p>Three things we are willing to bet (this is Las Vegas):</p>
<ul>
<li>It&#8217;s been around a long time.</li>
<li>You have to scour the Earth and certainly Sin City to find a better preparation than Hash House A Go Go.</li>
<li>Chef Anthony loves what he does.</li>
</ul>
<p>Hash House serves some of the biggest and tastiest portions at their original Sahara location or their new location at Imperial Palace. </p>
<p>To prepare this dish Chef Anthony takes (2) 8 ounce chicken breasts that are breaded in corn flakes, corn starch, house seasoning, and fresh sage.  The chicken is then fried. </p>
<p>While the chicken is cooking the waffle is prepared with Applewood Smoked Bacon <span style="text-decoration: underline;">inside</span> of the waffle. </p>
<p>Once everything is cooked perfectly the Hash House Chef drizzles a homemade soy barbecue sauce around the plate, stacks the waffles and chicken, then tops it with thick maple syrup and fried leeks. </p>
<p>The final dish is about 10 inches high so I hope you are hungry!</p>

<p>Chef&#8217;s Palate has only 15 tables so get there early to enjoy a warm atmosphere and friendly service. Located in Henderson only a mile from Anthem Country Club, this restaurant caters to locals but it is still only a fifteen minute drive from the Las Vegas Strip.</p>
<p>On any given night the owners Chef Rex George and Kristy George bring thirty-five years of culinary experience with them to serve you. Chef George has spent twenty years in the &#8220;back of the house&#8221; as Kristy has spent fifteen years in the &#8220;front of the house.&#8221;</p>
<p>Known as a Martini and Wine Bar, Chefs Palate delivers on a creative wine and drink list that was designed in part by World Champion Master Mixologist Anthony Alba&#8230;but don&#8217;t think it&#8217;s only about the beverage. This Las Vegas Dining establishment (actually located in Henderson) will serve up a fine meal to go with one of their fancy drinks.</p>
<p>The food is not only delicious, it&#8217;s artwork with colorful and elevated presentations.</p>
<p>The Veal Osso Bucco is braised for fours hours in a homemade remoulade with Cabernet Sauvigon, Veal bones, carrots, celery, and onions. The meat is so tender it has to be tied with Chef String or the meat will fall right off the bone. When finished, the meat sits in the middle of a saffron risotto thickened with parmesan. To complete the dish Chef George covers the Osso Bucco with a mushroom gravy demiglaze.</p>
<p>Quick Tip-It is named Osso Bucco meaning &#8220;hole bone&#8221; in Italian, because the bone marrow is part of the dish.<br />

			<content:encoded><![CDATA[<p></p><p>At Roma Grill Chef Roberto makes fusilli pasta in their pasta factory that is located just inside the front door of the restaurant.  </p>
<p>Roberto starts with searing the vegetables.  He uses bell peppers, asparagus tips, fresh tomatoes, yellow squash, and mushrooms.  Half way through searing he adds garlic, salt, and pepper.  Near the end of cooking Chef Roberto adds a spash of white wine and tomato sauce and he puts the fusilli in the pan with the sauce.  The corkscrew shaped pasta allows the pasta to absorb the sauce and give it a better flavor.  The pasta is made fresh so it only takes a few minutes to cook, unlike a dried pasta.  </p>
<p>Add a drizzle of extra virgin olive oil and it&#8217;s time to eat a colorful, vegetarian pasta dish.  </p>
